Zucchini Bread

3 cups all purpose flour
3 large eggs
2 cups granulated sugar
1 cup vegetable oil
1 teaspoon vanilla extract
1 cup raisins or nuts
2 cups grated zucchini (about 2 medium)
1 teaspoon ground cinnamon
1 teaspoon salt
1 teaspoon soda
1/4 teaspoon baking powder
1/2 cup sour cream

Mix all ingredients together, pour into two greased 9 x 5 x 3-inch loaf pans, or 6 small ones.

Bake at 350*F (175*C) for 1 hour (smaller about 45 minutes), or until tested done when wooden pick inserted in center comes out clean. Cool 10 minutes, remove from pans and cool completely on wire racks.

Makes 2 loaves.
