Vinaigrette Coleslaw

40 ml vinegar 3 tbsp
30 ml sugar 2 tbsp
30 ml salad oil 2 tbsp
1 ml dry mustard 1/4 tsp
salt & pepper to taste
750 ml green cabbage, shredded 3 cup
250 ml red cabbage, shredded 1 cup
250 ml carrots, shredded 1 cup
50 ml green onions, sliced 1/4 cup

In a small jar, add vinegar, sugar, oil, mustard, salt and pepper. Shake well.

In a large bowl, combine cabbages, carrots and green onions. Pour vinaigrette over cabbage mixture. Toss lightly to coat. Cover and chill for 2 to 24 hours.

Serves: 6
