Tex Mex Tuna Casserole

This creamy tuna and pasta dish gets its wonderful flavor from green chiles and salsa.

8 oz pasta (elbows, shells, twists, etc.)
1 small onion, chopped
16 oz cottage cheese
3/4 cup sour cream
4 oz can diced green chiles
3 – 4 Tablespoons salsa
2 cans (6 oz) Albacore tuna, drained
12 saltine crackers, crumbled
12 cashews, chopped

Preheat oven to 350 degrees. Cook pasta in salted boiling water until tender. Add chopped onion for last two minutes of cooking to soften slightly. Drain.

Meanwhile, combine cottage cheese, sour cream, chiles, and salsa in a large bowl until well blended. Add cooked pasta and stir. Break tuna into bowl and stir again.

Turn mixture into a greased 2-quart casserole dish. Combine crackers and cashews and sprinkle over top. Bake uncovered for 20 – 30 minutes, or until hot and bubbling.

Yield: 4 servings
