450 g sweetcorn; defrosted if frozen
1 small red or green pepper; diced
50 g raisins
4 tablespoons corn oil; or olive oil
1 tablespoon Worcestershire sauce
1 tablespoon tomato ketchup
1 tablespoon red wine vinegar
1 tablespoon soft dark brown sugar
1 tablespoon onion; finely chopped, optional
Yield: 4 servings
Place sweetcorn, pepper and raisins in a bowl. Whisk together remaining ingredients and pour over the sweetcorn mixture. Mix thoroughly and chill before serving.
