Sun Dried Tomato Vinaigrette

2 garlic cloves, minced
30 ml sun-dried tomatoes, oil packed & finely chopped, drained 2 tbsp
15 ml sun-dried tomato pesto 1 tbsp
15 ml balsamic vinegar 1 tbsp
15 ml red wine vinegar 1 tbsp
60 ml cold water 1/4 cup
60 ml olive oil 1/4 cup

In a blender, combine garlic, sun-dried tomatoes, salt and pepper to taste, pesto, balsamic vinegar, red wine vinegar and cold water. Process until well incorporated with the motor running. Add oil gradually, process until well mixed. Stir in additional cold water, if needed.
