Spinach Au Gratin

2 large onions, sliced
15 ml vegetable oil 1 tbsp
15 ml butter 1 tbsp
2 bacon strips, diced
284 g fresh spinach, torn 10 oz
2 garlic cloves, minced
10 ml lemon peel, grated 2 tsp
5 ml fennel seed, crushed 1 tsp
salt & pepper to taste
250 ml swiss cheese, shredded 1 cup
30 ml parmesan cheese, grated 2 tbsp

In a large skillet; saute onions in oil and butter until golden brown. Remove to paper towels to drain. In same skillet; cook bacon over medium heat until crisp. Using slotted spoon, remove to paper towels to drain, reserving drippings.

Add spinach and garlic. Cook and stir for 6 minutes or until heated through. Drain thoroughly. Stir in lemon peel, fennel seed, salt, pepper and 1/3 cup (75 ml) swiss cheese and bacon.

Place half of onions in a greased baking dish. Top with spinach mixture and remaining onions. Sprinkle with parmesan cheese and remaining swiss cheese. Bake, uncovered, in preheated 350 F (180 C) oven for 25 to 30 minutes or until cheese is melted.
