Spicy Chicken Stir Fry

1 lb boneless, skinless chicken, thinly sliced
4 cups sliced vegetables
1/4 cup soy sauce
1/2 cup water
2 tablespoon brown sugar
2 cloves garlic, minced
1 teaspoon ginger powder
2 tablespoon peanut butter
1/4 teaspoon chili pepper flakes
2 tsps cornstarch
1 tablespoon water
2 packages Mr. Noodle noodles

Discard seasoning packet from Mr. Noodle noodles. Break noodles into smaller pieces and soak in boiling water until soft. In a non stick skillet, over medium heat, stir cook chicken and vegetables for 5 minutes. Mix soy sauce, water, sugar, garlic, ginger, peanut butter and chili pepper flakes. Pour over chicken and vegetables and continue to stir cook for 2 minutes. Mix cornstarch in water and add to skillet. Stir until the sauce is clear and thick. Drain noodles and add to skillet. Stir until noodles are coated with sauce.

NOTE:
To save time, use frozen vegetables or precut fresh vegetables
