Makes 1-1/2 quarts
1 quart ( 4 cups ) apple cider, pasteurized or unpasteurized as desired
3/4 cup unsweetened pineapple juice
3/4 cup orange juice
3 (2-inch) cinnamon sticks, broken
4 to 6 whole cloves (optional)
2 tablespoons light brown sugar or 1-1/2 tablespoons honey (optional)
1 to 2 teaspoons grated orange peel (optional)
additional 2-inch cinnamon sticks as stirrers (optional)
In a medium heavy saucepan, combine cider, pineapple and orange juices, cinnamon sticks, cloves, if desired, and brown sugar or honey and orange peel, if desired. Bring to a simmer over moderate heat. Serve hot in mugs, if desired. Or pour mixture into a heat-proof glass pitcher, cover and chill thoroughly in the refrigerator. Remove cinnamon sticks and cloves before serving either hot or cold brew. May garnish each serving with a fresh 2-inch cinnamon stick as a stirrer.
Tipsy Adult Variation
Reduce cider to 3 to 3-1/2 cups. Add 1/2 to 1 cup brandy or bourbon whiskey or dark rum to mixture after it has come to a simmer and has been removed from heat.
