8 ounces thin spaghetti
1/4 cup butter or margarine
1/4 cup flour
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups water
2 chicken flavor bouillon cubes
1 cup light cream
1 (12-ounce) can SPAM® luncheon meat, diced
1 (4-ounce) can sliced mushrooms, drained
4 tablespoons grated Parmesan cheese, divided
Cook spaghetti according to package directions; drain. In medium saucepan, melt butter; blend in flour, salt, and pepper. Stir in water and bouillon cubes; cook and stir over medium heat until mixture thickens and boils. Remove from heat; mix in cream, SPAM®, mushrooms, and 2 tablespoons cheese. Combine sauce and spaghetti; turn into lightly-greased 2-quart casserole. Sprinkle remaining cheese over top of casserole. Bake in 425°F oven 30 minutes, or until bubbly and lightly browned top.
