3 tablespoons extra virgin olive oil
2 onions, sliced
3 garlic cloves, crushed
About 3-1/2 pounds fresh turkey pieces
4 tomatoes, seeded and chopped
2 bay leaves
1/4 teaspoon dried rosemary
1/4 teaspoon dried thyme
1/4 teaspoon dried marjoram
1 (28 ounce) can whole tomatoes
1/2 cup dry white wine
1/2 pound link sausage, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
Heat olive oil in a large skillet. Brown sliced onions, crushed garlic cloves, and turkey. Add chopped tomatoes, bay leaves, rosemary, thyme, marjoram, whole tomatoes, and white wine. Simmer over low heat for 1 hour or until the turkey is tender.
Add chopped link sausage, chopped green bell pepper, and chopped red bell pepper; cook 15 minutes more.
