Smokey Potato Bake

1 kg potatoes 2 lb
25 ml breadcrumbs 2 tbsp
250 g smoked bacon 1/2 lb
45 ml butter 3 tbsp
500 g cottage cheese 1 lb
salt & pepper to taste

Boil potatoes until tender. When cool, peel and slice. Sprinkle a deep, well-greased oven-proof dish with some of the breadcrumbs. Place a layer of potato over this. Chop bacon and fry until crisp. Scatter half the bacon over the potato in the dish. Melt butter and combine with cottage cheese. Pour half of this over bacon and potatoes. Add another layer of potatoes and another layer of bacon. Pour over the remaining butter and cheese. Season to taste with salt and pepper. Sprinkle the rest of the breadcrumbs on top and dot with additional butter.

Bake in a moderate oven, uncovered for 30 minutes.
