2 large potatoes, cooked & mashed
3 green onions, chopped
2 ml ground coriander
15 ml dijon mustard
2 ml salt
1 ml grated lemon rind
1 ml pepper
1 ml hot sauce
1 ml dill weed
1 egg, slightly beaten
1 can salmon, drained
1 can tuna, drained
30 ml vegetable oil
1 lemon, cut into 4 wedges
In a large bowl with hot potatoes; stir in green onion, coriander, mustard, salt, lemon rind, pepper, hot sauce and dill. Blend in egg. Fold in salmon and tuna; cool 5 minutes.
Make mixture into patties. In a large skillet, over medium heat; cook until brown on each side. Squeeze lemon wedges over.
