Roasted Red Pepper Spread

1 large red bell pepper*
1 (8-ounce) package cream cheese, softened
2 green onions, chopped
1 tablespoon capers

Char pepper over gas flame or in broiler until blackened on all sides. Wrap in paper bag and let stand 10 minutes.

Peel and seed. Rinse if necessary; pat dry. Place all ingredients in a food processor and process until well combined.

Serve with an assortment of crackers.

makes about 1 1/4 cups spread.

*You may use the canned variety.
