Roasted Red Pepper Salad Dressing

2-3 roasted red peppers
1 tablespoon mustard (Yellow, Dijon or brown – your choice)
1/4 cup of mayonnaise

Just finely chop the peppers in a food processor, then add mustard and mayonnaise until smooth. Chill before using.
