Roasted Potatoes

7 ml cumin 1 1/2 tsp
45 ml olive oil 3 tbsp
6 ml salt 1 1/4 tsp
3 ml paprika 3/4 tsp
1 kg russet potatoes, peeled & cut into small wedges 2 lb

Combine cumin, oil, salt and paprika. Place prepared potatoes in 9 x 13 inch (23 x 33 cm) baking pan. Pour spice mixture over potatoes and toss to coat well. Spread out potatoes in single layer until brown and crisp around edges, stirring occasionally for about 35 minutes.
