500 g potatoes, peeled & cut into large chunks 1 lb
50 ml milk 1/4 cup
2 ml salt 1/2 tsp
15 ml oil 1 tbsp
500 ml broccoli, coarsely chopped & cooked 2 cup
250 ml cheddar cheese, grated 1 cup
3 eggs
250 ml milk 1 cup
salt & pepper to taste
2 green onions, chopped
In a large pot of boiling water; cook potatoes for about 20 minutes or until tender. Drain well. Add milk and salt; mash.
Brush a deep dish pie plate with half of oil. Add mashed potatoes and press down firmly. Brush with remaining oil.
Bake crust in preheated 375 F (190 C) oven for 25 to 30 minutes or until potatoes are golden brown. Reduce oven to 350 F (180 C).
Arrange broccoli on top of potato crust. Sprinkle cheese on top.
In a medium bowl; whisk together eggs, milk, salt and pepper. Pour over broccoli and cheese. Sprinkle with green onions.
Bake for 25 to 30 minutes or until slightly puffed, browned and just set. Allow to cool for 10 minutes for slicing.
