175 ml natural bran 3/4 cup
175 ml whole wheat flour 3/4 cup
175 ml sugar 3/4 cup
7 ml cinnamon 1 1/2 tsp
5 ml baking powder 1 tsp
5 ml baking soda 1 tsp
2 ml salt 1/2 tsp
250 ml raisins 1 cup
250 ml cooked pureed pumpkin 1 cup
2 eggs
75 ml vegetable oil 1/3 cup
125 ml plain yogurt 1/2 cup
In large bowl; combine bran, flour, sugar, cinnamon, baking powder, baking soda, salt and raisins. Toss to mix. Add pumpkin, eggs, oil and yogurt. Stir until just combined. Spoon batter into 12 paper-lined or non-stick muffin tins. Bake at 400 F (200 C) oven for 25 minutes or until firm to the touch.
