Potato Patty Appetizer

3 potatoes, shredded
750 ml cheddar cheese, shredded 3 cup
50 ml flour 1/4 cup
125 ml ham, finely chopped 1/2 cup
1/2 cup green onion, finely chopped 125 ml
1 egg
25 ml parsley, finely chopped 25ml
oil for frying
sour cream
salsa

Rinse potatoes in cold water. Drain and squeeze out excess moisture in clean towel. In large bowl, combine potatoes, cheese and flour. Mix well. Add remaining ingredients (except oil) and mix well. Heat oil in large non-stick frying pan. Drop mixture by tablespoon into pan. Flatten slightly. Cook for 3 to 5 minutes on each side.

Serve immediately with sour cream and/or salsa.
