500 g zucchini, coarsely grated 1 lb
500 g potatoes, grated 1 lb
1 onion, finely chopped
40 ml chives, chopped 3 tbsp
1 egg
40 ml all purpose flour 3 tbsp
salt & pepper to taste
40 ml olive oil 3 tbsp
In a large bowl; add zucchini, potatoes, onion, chives, egg, flour, salt, pepper and nutmeg. Mix well.
In a large skillet; heat oil. Place large tablespoon of mixture into pan. Flatten with spatula. Cook in batches over medium-low heat for 10 to 12 minutes on each side until golden and crunchy. Add more oil if needed. Serve hot.
