15 ml butter 1 tbsp
1 onion, chopped
1 garlic clove, crushed
4 tomatoes, sliced
2 red potatoes, peeled & sliced
25 ml fresh chives, chopped 2 tbsp
15 ml tomato paste 1 tbsp
5 ml lemon rind, finely grated 1 tsp
2 ml ground thyme 1/2 tsp
1 bay leaf
1 L chicken bouillon 4 cup
ground pepper

Heat butter in large pan; add onions and garlic. Cook over medium heat until onion is soft. Add tomato, potato, chives, tomato paste, lemon rind, thyme, bay leaf and bouillon. Bring to a boil, reduce heat and simmer uncovered, for about 20 minutes or until potato is tender. Remove from heat, discard bay leaf. Allow to cool. Place mixture in batches in a food processor. Process 30 seconds or until the mixture is smooth. Return to pan, season with salt and pepper to taste, heat through. Serve topped with a little sour cream.
