Portobello “Pizzas”

Most prefer to eat this “pizza” with a knife and fork!

1 6-ounce package Portobello caps, or 4 whole Portobello caps
Extra virgin olive oil, for brushing
1/2 cup pizza or marinara sauce
1 1/4 cups (5 ounces) shredded mozzarella
2 tablespoons freshly grated Parmesan cheese

Preheat the oven top 350*F (175*C).

Wipe the caps clean of any dirt and brush lightly with oil. Place them on a baking dish, gill side up.

Cover generously with the sauce, then top with the cheeses. Place in the oven and bake for 6 to 8 minutes, or until cheese is melted. Serve immediately.

Makes 4 servings.
