Porcupine Meatballs

500 g lean ground beef 1 lb
1 small onion, finely chopped
75 ml rice 1/3 cup
salt & pepper to taste
1 egg
50 ml flour 1/4 cup
30 ml vegetable oil 2 tbsp
1 can tomato soup (10 oz / 284 ml)
250 ml water 1 cup

In a mixing bowl, combine beef, onion, rice, salt, pepper and egg. Shape into 1 inch (2.5 cm) balls. Roll each ball in flour and brown in hot oil in skillet.

Place meatballs in casserole dish. In a small bowl, combine soup and water. Pour over meatballs. Bake in preheated 350 F (180 C) oven for 1 hour or until rice is tender. Add more water during baking if necessary.
