Polpette di melanzane (Aubergine croquettes)

5 normal size aubergines,
2 eggs,
100 gr. caciocavallo cheese,
50 gr. breadcrumbs,
200 gr. flour,
basil,
olive oil,
salt.

Chop aubergines and cook in salty water. Drain and when cold mix them with eggs, grated cheese, breadcrumbs, minced basil and salt.

You should get a soft mix. Make normal size croquettes, flour and deep fry in very hot oil.
