450g/1lb courgettes (zucchini)
4 tablespoon olive oil
salt and black pepper
4 tablespoon single cream
225g/8oz penne pasta
2 tablespoon chopped basil – or more
(pasta with courgette sauce)
Thinly slice the washed and trimmed courgettes. Sauté the courgettes in the olive oil for 15 minutes, but do not allow them to brown, adding the basil half way through cooking. Season the courgettes and combine with the cream.
Blend in a food processor until smooth. Add the sauce to freshly cooked pasta, mix well and garnish with some chopped basil.
