Pear-fection Muffins

1 Cup Oat Bran
1 Cup Skim Milk
2 Egg Whites
1/2 Cup Brown Sugar
3 Tablespoons Oil
1 Large Ripe Pear
1 Cup Flour
1 Teaspoon Baking Powder
1 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg, (optional)
1/2 Cup Nuts, (optional)

Soak oat bran in milk for one hour. Mix dry ingredients. Mix all others in a blender at low speed, including pear. Add to dry ingredients. Bake at 400 for 30 minutes. This is good with other fruit that gets a little too ripe.

Makes 1 dozen.
