2 Cups Flour
1 Cup Flaked Coconut, toasted
1 Cup Coarsely Chopped Nuts
1-1/2 Teaspoons Baking Powder
1/4 Teaspoon Salt
1 Cup Chopped Peeled Pears
2 Teaspoons Grated Lemon Rind
1 Tablespoon Lemon Juice
1/3 Cup Soft Butter
2/3 Cup Light Corn Syrup
2 Eggs
2 Tablespoons Milk
1/2 Teaspoon Vanilla
Preheat oven to 350. Grease 9x5x3 inch loaf pan. In medium bowl stir together flour, coconut, nuts, baking powder, and salt. In small bowl stir together pears, lemon rind, and lemon juice. In large bowl with mixer at medium speed, beat together butter and syrup until smooth. Beat in eggs until well mixed. Beat in milk and vanilla. Stir in flour mixture just until moistened. Stir in pear mixture. Turn into prepared pan. Bake 55 minutes or until toothpick inserted in center comes out clean. Remove from oven and let rest in upright position for 10 minutes before turning out on wire rack. Cool completely. (This bread is best on the second day. )
