Peach Jam (Microwave)

450 g peaches; peeled, in chunks
250 g sugar
1-2 tablespoons lemon juice; or to taste

Put the peaches and sugar in a 3-4 litre microwave safe bowl and microwave, uncovered on HIGH for 5 minutes. Stir and mash the peaches. Microwave on HIGH for another 8 minutes. Stir again, and microwave for 2-4 minutes or until thickened. Stir in 1 tablespoon lemon juice, taste and add more lemon juice if necessary. Cool and store in a covered container in the refrigerator.
