Peach Ice Cream

4 cups chopped, peeled peaches
1 cup sugar
1 (12-ounce) can evaporated milk
1 (3-ounce) box vanilla instant pudding mix
1 (14-ounce) can sweetened condensed milk
4 cups milk

Combine fruit and sugar and let sit for 1 hour. Put sugared fruit in food processor and process until smooth. In a large bowl, stir together evaporated milk and pudding mix. Add pureed fruit, condensed milk, and milk. Pour mixture into ice cream freezer container. Freeze according to manufacturer’s instructions with ice and salt. Spoon ice cream into an airtight container and allow to harden until firm (about an hour).
