Pani frittu cu l’ova (Fried bread with eggs)

Stale homemade bread,
3 eggs,
basil,
olive oil,
salt and pepper.

Chop the bread and dip each piece into cold water for a second. Fry in very hot oil.

In the meantime, beat eggs with salt, pepper and basil. Immerse well the fried bread cubes (still hot) into the eggs and fry again for few minutes. The egg should make a crust around the bread.

Serve hot with vegetable cooked in oil and garlic, or dress with tomato sauce or extract.
