Onion Crostini

500 g mushrooms, sliced 1 lb
125 ml cooking, red or spanish onion, finely chopped 1/2 cup
25 ml vegetable oil 2 tbsp
1 clove garlic
15 ml parsley 1 tbsp
25 ml white wine 2 tbsp
salt & pepper to taste
8 slices french or Italian bread, toasted

Heat oil in a large frying pan; add mushrooms and onions and cook for 5 to 6 minutes. Add garlic and sauté 6 to 7 minutes longer. Add parsley and wine, cook for an additional 3 to 4 minutes. Sprinkle with salt and pepper and stir well. Top the toasted bread slices and serve immediately.
