Portions: 1/2 Cup Each
1-1/2 quart (2 lb) onions, dry, chopped
3 cups (1 lb) bacon, chopped
10 lb. okra, partially thawed
1 cup (4 oz) flour, wheat, hard
4 tablespoon (2 oz) sugar, granulated
3 tablespoon (2 oz) salt
4 tablespoon (1 oz) chili powder
1 teaspoon pepper, black
1-1/2 gallon (12 lb 12 oz or 2-No. 10 can)
1 quart water, boiling
Sauté onions and bacon 5 minutes or until onions are light yellow. Cut okra into 1/2-inch rings; add to sauté ed onions and bacon. Cook 5 minutes, stirring frequently.
Add flour, sugar, salt, chili powder and pepper; stir until blended. Add tomatoes and water; mix well. Bring to a boil. Reduce heat and simmer 15 minutes or until okra is tender.
NOTE:
16 lb (16-No. 303 can) canned okra may be used
