300 ml carrots, chopped 1 1/4 cup
175 ml onions, chopped 3/4 cup
125 ml celery, chopped 1/2 cup
40 ml oil 3 tbsp
2 can chicken broth soup (10 oz / 284 ml) 2
500 ml water 2 cup
1.2 L broccoli florets 4 1/2 cup
125 ml quick cooking rice, uncooked 1/2 cup
500 ml milk 2 cup
50 ml parmesan cheese, grated 1/4 cup
In a large saucepan; heat oil over medium-high heat. Add carrots, onions and celery, cooking for 3 minutes. Add broth and water. Bring to boil.
Stir in broccoli and rice. Reduce heat to medium-low. Simmer 10 to 15 minutes or until vegetables are tender, stirring frequently.
Add soup, in batches, to blender. Cover and blend until pureed. Return soup to saucepan. Add milk and cheese. Cook until heated through, stirring occasionally.
