Mushrooms with Shallots

500 g fresh mushrooms, sliced 1 lb
7 ml vegetable oil 1 1/2 tsp
2 shallots, thinly sliced
30 ml soy sauce 2 tbsp
salt & pepper to taste

In a large non-stick skillet; heat oil. Add shallots and cook for a few minutes until tender. Increase heat to medium-high and add mushrooms and soy sauce. Stir well. Cook for a few minutes or until liquid has evaporated. Season with salt and pepper.
