Mushroom Grits

625 ml water 2 1/2 cup
125 ml quick cooking grits 1/2 cup
375 ml mushrooms, sliced 1 1/2 cup
125 ml red pepper, chopped 1/2 cup
4 green onions, chopped
2 medium garlic cloves, minced
2 ml worcestershire sauce 1/2 tsp
1 salt
250 ml cheddar cheese, shredded 1 cup

In medium skillet, bring water to boil over high heat. Stir in grits and cook according to package directions, omitting any salt or fat.

Meanwhile, heat a medium skillet over medium-high heat until hot. Add mushrooms and cook until they begin to lightly brown, about 3 minutes. Add red pepper and onion. Cook 4 minutes or until pepper is just tender, stirring frequently. Add garlic, worcestershire sauce and salt to taste. Cook for 30 seconds.

When grits are cooked, add a bit of salt. Place in shallow serving bowl. Sprinkle cheese over all and top with vegetables.
