Mixed Fruit Brulee

1 lb prepared assorted summer fruits (such as strawberries, raspberries, cherries, etc) Thawed, if frozen.
3/4 cup Half-fat heavy cream alternative
(for even lower fat, omit this ingredient, and double the quantity of the yogurt)
3/4 Cup Low-fat unsweetened yogurt
1 teaspoon Vanilla extract
4 tablespoons Raw crystal sugar

Serves 4

Divide the fruit evenly among 4 small, heatproof ramekin dishes. Mix together the half-fat cream alternative, yogurt, and vanilla. Spoon generously over the fruit. Preheat the broiler. Top each serving with 1 tablespoon of sugar and broil for 2-3 minutes until the sugar melts and just begins to caramelize.

Serve the brulees piping hot.

A Variation when making this dish on special occasions, is to soak the fruits in 2-3 tablespoon fruit liqueur beforehand.
