12 lb sugar
6 lemons
6 oranges
1 lb Preserved ginger
Cut up melons into small dice, also lemons and oranges cut very thinly. Sprinkle half of the sugar over them and stand for 24 hours. Then boil up and add remainder of sugar. Boil quickly to keep it a nice color and until the juice begins to set. Bottle when cool and seal.
