Melon Fruit Cup for 100

Servings: 100 Portions (3-1/4 Gallons)
Portions: 1/2 Cup Each

A.P. 10 apples (4 lb) fresh, eating
A.P. 12 oranges (4 lb) fresh
3 quart (6 lb 12 oz or 1-No. 10 can) peaches, halves, quarters or slices, canned
3 quart (6 lb 12 oz or 1-No. 10 can) pears, halves or quarters, canned
A.P. 5 to 6 (12 lb) cantaloupes, pared and diced

Wash and core apples. Do not pare. Peel oranges. Cut apples, oranges, cantaloupes, and
pears into 3/4-inch pieces. Combine with pineapple and juice from all fruits. Cover and
refrigerate until ready to serve.
