1 thick slice bread, crust removed
3 tablespoons milk
500g minced beef
250g minced pork
1 egg
1/4 teaspoon salt
fresh ground black pepper
1/2 teaspoon nutmeg
5 tablespoon butter, softened
2 cups beer
4 tablespoons flour
Soak the bread in milk and then knead into the meat together with the egg, salt, pepper and nutmeg. Form 8 balls and saute in 3 tablespoons of the butter until golden brown. Add beer, cover the pan and simmer 20 minutes over a very low heat. Cream the remaining 2 tablespoons of butter with the flour. Add the flour mixture bit by bit, stirring constantly with a wire whisk until a thick sauce is formed.
