Low Fat Jumpin’ Jack Stomp

4 cups. frozen mashed potatoes
1-3/4 cups. evaporated skim milk
2 ozs. reduced fat jalapeño pepper Monterey Jack Cheese, shredded

In a Medium saucepan, over medium beat, combine frozen mashed potatoes and milk; bring to a boil, stirring occasionally. Continue Cooking 6 minutes longer, stirring occasionally; stir in cheese. Cover and let stand 1 to 2 minutes. Stir before serving.
