Low Fat Cruise Ship Mustard Dressing for 16

3/4 lb low-fat tofu
1/3 cup water
3 tablespoon dijon mustard
2 tablespoon lemon juice, bottled
1 tablespoon fat-free Parmesan cheese
1/2 tablespoon granulated sugar
1/4 teaspoon salt
12 ozs leaf lettuce, torn into pieces
1 cup mushrooms, sliced
1 cup croutons

In a food processor, combine tofu, water, mustard, lemon juice, Parmesan cheese, sugar, and salt. Process until smooth. Serve on lettuce topped with mushrooms and croutons.

Makes 16 servings.
