Low Fat Chocolate Chip Cookies

1 c. prune puree
3/4 c. granulated sugar
3/4 c. packed brown sugar
3 large egg whites
1 teaspoon vanilla
2-1/4 cs. flour
1 teaspoon baking soda
1 teaspoon salt
2 cs. semi-sweet chocolate chips

Preheat oven to 375 deg F. Coat baking sheets with nonstick cooking spray; set aside. in large bowl, beat prunes, sugars, egg whites and vanilla to blend thoroughly. In small bowl, mix flour, baking soda and salt. Stir dry ingredients into prune mixture; mix completely. Stir in chocolate chips. Drop tablespoonsful ontp prepared baking sheets. Bake 10 minutes until lightly browned around the edges. Remove to racks to cool completely.

NOTE:
can substitute jarred baby food prunes (approx 4 2-1/2 oz jars)

Makes 2-1/2 dozen cookies.
