500 g pork tenderloin, cut into bite size pieces 1 lb
15 ml vegetable oil 1 tbsp
1 medium onion, chopped
1 garlic clove, minced
30 ml brown sugar 2 tbsp
30 ml cornstarch 2 tbsp
75 ml water 1/3 cup
30 ml vinegar 2 tbsp
30 ml soy sauce 2 tbsp
75 ml ketchup 1/3 cup
1 can pineapple tidbits, drained, reserve syrup (14 oz / 398 ml)
1 green pepper, chopped
In a skillet, heat oil. Add pork and brown. Add onion and garlic. Saute until translucent. Place in lightly greased casserole.
In small saucepan, combine brown sugar and cornstarch. Add water, vinegar, soy sauce, ketchup and reserved pineapple juice. Cook over low heat, stirring until smooth and thick. Simmer for 2 minutes. Pour over pork.
Bake in preheated 350 F (180 C) for 30 minutes., Add pineapple tidbits and green pepper. Bake for an addtional 30 minutes. Serve with mashed potatoes.
