Islander Turkey Sandwich

Turkey salad with mango and ginger on bread with cheese and lettuce.

2 cups Honeysuckle White Boneless Turkey, cooked, cubed (great for leftover turkey)
1/2 cup mango, diced
1 teaspoon peeled and finely grated ginger root
1/3 cup mayonnaise, low-fat
12 slices multigrain bread
1/4 pound lettuce leaves

Mix cubed turkey with diced mango, ginger root and mayonnaise. Spread on multigrain bread, with lettuce.

Makes 6 servings.
