4-1/2 cup all-purpose flour
1 teaspoon each salt and baking soda
1 tablespoon baking powder
1/4 cup sugar
1/8 teaspoon ground cardamom or coriander
4 tablespoon butter or margarine, cut into pieces
1 egg
1-3/4 cup buttermilk
Preheat oven to 375 degrees. Lightly grease two 9 inch baking pans. Cut butter into 4 cups flour. Add all ingredients to flour mixture except buttermilk and egg. In a separate container mix buttermilk and egg together. Add buttermilk mixture to the flour mixture. Mix until all ingredients are wet. Turn onto floured surface and knead for ten minutes. Separate the dough and shape into two round loaves. Cut across in the tops of them being careful not to go the whole way through. Bake for 35 – 40 minutes.
