Irish Potato Candy

1 baking potato
2 or 3 boxes of 10x (confectioner’s)sugar
1 teaspoon vanilla (or mint, orange, any flavor will work) extract
Cinnamon (optional)
Red or Green food coloring (optional)

Bake, peel, and mash potato with a fork. Mix in sugar, a little at a time, until desired consistency is reached (it takes PLENTY) Form into balls and roll in cinnamon for traditional Irish Potatoes, or divide. Color 1/2 with red (or any color) and twist with white to make patties. Let them dry on a sheet of waxed paper.
