Huckleberry Fritters

1 1/2 cups all-purpose flour
3/4 cup sugar
1 tablespoon baking powder
Pinch of salt
3/4 cup fresh huckleberries
1 egg, beaten
1 cup milk

Sift together dry ingredients; add berries.

Mix egg and milk and add to dry mixture Mix just until moistened

Drop batter by tablespoonfuls into deep hot oil (375*F / 190*C). Fry until golden brown, 3 to 4 minutes turning once. Drain on paper towels.

Sprinkle with powder sugar and serve warm.

Makes about 2 dozen.
