Hot Roast Turkey Sandwich for 100

Portions: 1 Sandwich Each

18 lb 12 oz turkey, boneless, cooked
200 slices (12 lb) bread
3-1/3 gallons, 1-2/3 Chicken Gravy recipe, prepared

Cut turkey into thin slices, 16 to 24 per pound. Place 3 to 4 slices turkey on one slice of bread; top with second slice of bread. Prepare 1-2/3 recipe for Chicken Gravy. Pour 1/2 cup hot gravy over sandwich. Serve immediately.

NOTE:
27 lb turkey, boneless, raw may be used. Follow “Roast Turkey” recipe.
