75g/3 oz butter
1*1-1/2 kg./3 lb. Chicken
SAUCE
4 spring onions, chopped
5ml./1 teaspoon finely chopped fresh ginger
15ml/1 tablespoon honey
15ml/1 tablespoon soy sauce
2.5ml/1/2 teaspoon salt
150ml/5fl. ounce sherry
Melt the butter in a roasting pan. Add the chicken and baste it thoroughly with butter. Put into oven pre-heated to moderate heat (180c/350f) and roast for 45 mins. Baste frequently with the melted butter during the cooking time. Mix the sauce ingredients together and pour over the chicken. Return it to the oven and continue to roast for 30 -40 mins, or until the chicken is cooked through. Baste frequently with the sauce during the cooking time. Serve with the cooking juices.
