Honey & Apple Ribs

1.4 kg country style pork ribs 3 lb
1 medium onion, chopped
2 garlic cloves, minced
15 ml vegetable oil 1 tbsp
175 ml bottled chili sauce 3/4 cup
125 ml apple juice 1/2 cup
125 ml apple juice 1/2 cup
50 ml honey 1/4 cup
2 ml dry mustard 1/2 tsp

Place ribs in shallow roasting pan. Bake, uncovered, in preheated 350 F (180 C) oven for 1 hour. Drain off fat.

Meanwhile, in medium saucepan, cook onion and garlic in oil until tender. Stir in chili sauce, apple juice, honey and dry mustard. Bring to boiling. Reduce heat and simmer, uncovered, for 20 minutes.

Spoon 1/3 cup (75 ml) sauce over ribs. Bake, covered, for 45 to 60 minutes or until tender, turning ribs and spoon 1/3 cup (75 ml) more sauce over ribs after 25 minutes. Heat remaining sauce and serve with ribs for dipping.
