1 egg
1/3 cup Dijon Mustard
2/3 cup red wine vinegar
salt and freshly ground black pepper
6 cloves garlic, peeled and crushed
2 cups olive oil
Combine the egg, mustard and vinegar in the bowl of a food processor. Season to taste with the salt and pepper and process for 1 minute. With the motor still running, drop in the garlic. Add the oil, about a teaspoon at a time, until half the oil is incorporated. Then continue to add the oil in a thin steady stream until the mixture has thickened. Taste and correct the seasoning. The dressing should have a strong garlic flavour.
Makes 3 cups.
